Got Avocados? Easy and Healthy Summer Lunch Idea
Give me all the avocados!! This time of year, they are abundant and super cheap, and me and my family can’t get enough of them. Here is a quick and easy recipe for a yummy lunch…or anytime for that matter!
Me and 2 others in my family are vegetarians, so I’m always looking for some healthy and yummy recipes, especially for lunch. I seem to get stumped when it comes to lunches. I can only do so many salads. 🙂 A friend of mine told me about this and we adapted it to our taste. Feel free to do the same. It’s healthy, delicious and filling!!!
Ingredients (based on 4 servings):
2 Large ripe avocados
4 wheat bagels
Feta cheese
Lime Juice
Tomatoes (optional)
Salt, Pepper, Garlic Sea Salt grinder (I use this product in a lot of my dishes, see photo)
So here we go, so easy you’ll be eating in no time!!
Peel and mash the avocado. Sprinkle with Garlic Sea Salt grinder (approx. 1 tsp) pepper and additional salt to taste (if needed).
Add 1-2 TBS of Lime Juice. Mix avocado spread well and refrigerate 15-20 mins if you can. You may not be able to wait that long.
While the avocado spread is chilling, you can toast your bagels and spread with a tiny smear of butter just to moisten the bagel. Top the bagels with avocado and sprinkle with feta cheese!! That’s it! Add tomatoes for an extra touch…totally optional!
The combination of flavors is delicious!! If you add a small side salad, this makes a pretty meal for a brunch, ladies luncheon or just to impress your family! My teenagers are always asking for it, so it has to be good!
I think this falls under the Quick Meal, 5 ingredients or less category!! 🙂 My favorite category!! Let me know what you think!
